In my "Display Properties - Screen Saver" window, BOINC is not listed as an option. What do I have to do to get it listed?

Did you install BOINC as a service? Or a single user install?

I'm thinking that when installed as a service you don't have a screensaver option.

In general, running it as a screensaver slows the processing somewhat, and so is avoided. A screensaver of "none" is preferred. You can always go to the tasks tab of BOINC, select a WU that's running and then click the show graphics button to watch Rosetta at work..
